Spring Herb Salad

Some of you may have seen the picture of the herb salad I put out on instagram! I have gotten a few comments and figured I would share my recipe! I love this salad because you feel happy and so clean as you eat it! It also tastes AMAZING! My love for herb salads stem from my mom and my grandparents. I always grew up with fresh herbs in the house and in my food!

Ingredients:

1/2 cup of chopped parsley

1/2 cup of chopped dill

1/2 cup of chopped mint

1/2 cup of chopped oregano

1 cup of chopped arugula

1/2 cup of chopped cucumber

1/2 cup of chopped tomato

1/2 cup of crumbled feta

1/4 cup of chopped red onion

salt and pepper to taste

Olive oil and red wine vinegar to taste

Optional greek yogurt:)

Optional cracked bread or cracker

Optional lemon squeeze

Instructions:

  1. Wash and chop all of your herbs and vegetables

  2. Combine them in a large bowl

  3. Mix and then add olive oil and red wine vinegar, salt and pepper

  4. Mix!

  5. Enjoy! Feel free to eat with cracked bread, cracker and or greek yogurt! You could also add a squeeze of lemon!
