Stewed Summer Veggies
Who doesn’t love fresh summer food?! Where I live in Maryland we have the privilege of being around lots of amazing farmers markets and local farms. I am specifically blessed because my parents are amazing and have a great summer garden! They do a beautiful job maintaining it. My mom gave me the idea for this recipe and added a little of my own flare! If you love stewed veggies you will love this! I feel the key is also adding some fresh parmesan cheese! Also, if you want to add a protein I love adding mussels to this dish! You can add a flakey fish or honestly anything will do if you are looking for a protein. Personally I think a slice of homemade bread will go amazing with this !
Ingredients (This can include any veggies that are out of control in your garden or half price at a farmers market)!!!!
- Tomatoes 
- Squash, Zucchini 
- Eggplant 
- Red pepper if you like! 
- Garlic 
- Onion 
- Olive or Avocado oil 
- Sea Salt 
- Fresh Parmesan 
Instructions:
- Wash all your veggies and chop them up however you like! I like to rough chop mine:) 
- Peel the garlic and rough chop 
- Place enough oil to barely coat the pan and turn the heat to medium high. Add the garlic and onion and stir for 30-60 seconds. 
- Add all of your veggies. Stir consistently for 5 minutes. Place the lid on so it is half on the pan. Turn the heat to medium but it should still be pretty hot. 
- Add salt, then stir consistently for up to 10 more minutes. Turn down the heat to low and let it sit for another 5 minutes. 
- Add parmesan cheese and stir. Let it sit at low. Everyone is different but I like mine to be pretty cooked down. Let it cool! 
- Add more cheese if you like and enjoy with bread or anything you would enjoy!
