Christmas Chickpea Stew with Herbs & Basmati Rice

I love this dish, especially on colder nights. If you like herbs and a savory lemon flavor, I think you’ll really enjoy this.

This changes up your typical protein source by using chickpeas instead of meat (although you could add or substitute meat). These ingredients that are packed full of nutrients with incredible flavors!

Ingredients:

1/4 cup olive oil

1 onion, chopped

2 cans of chickpeas, drained

4 cloves garlic, chopped

1 teaspoon turmeric

3 teaspoons lemon zest

1/2 teaspoon red pepper flakes

2 cups baby spinach, chopped

2 Tablespoons lemon juice

3 cups vegetable broth

1/2 cup cilantro, chopped

1/2 cup parsley, chopped

1/2 cup dill, chopped

1 Tablespoon chives, chopped

2 cups basmati rice, cooked

plain green yogurt to serve

salt and pepper

Instructions:

  1. Heat the oil in a large pot over medium heat. When oil is hot, add the onion and cook for 5 minutes, until soft. Add the chickpeas and season with salt and pepper. Cook them, stirring until they are crisp (typically takes 5-mins). Add the garlic, turmeric, red pepper, and lemon zest and cook for about 1 minute.

  2. Add broth, lemon juice, and salt. Bring the stew to a boil, and then drop the temperature to low. Stir in the spinach, parsley, cilantro, dill, and chives. Simmer for 10-15 minutes. Add more salt and pepper to taste.

  3. Divide the rice into bowls, spoon out the stew, and then top with yogurt. Enjoy!
