Protein Egg Bites

I find it hard to get enough protein, especially in the mornings. However, I discovered this recipe that has been super helpful (and yummy) and helps me get 7-10 grams of protein per egg bite! They make a great grab-and-go breakfast or snack.

Ingredients:

  • 1 cup cottage cheese

  • 16 eggs

  • Swiss cheese, shredded

  • cheddar cheese, shredded

  • 5 small bell peppers, chopped

  • spinach, chopped (you can sub with mushrooms, if you like)

  • ham, diced (you can also use bacon or sausage)

  • onion, diced

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 teaspoon red pepper flakes

  • one 12-piece muffin tin


Instructions:

*preheat the oven to 350-degrees Fahrenheit

  1. Combine eggs, cottage cheese, salt, pepper, and red pepper flakes in a blender. Blend until foamy.

  2. Grease your muffin tin with butter. Add your spinach and bell peppers to half of the muffin tins, and top with the cheddar cheese. Add the ham and onion mix to the other half of the tins, and top with the Swiss cheese.

  3. Add the egg mixture to each tin, filling almost to the top. Take a spoon and mix each tin. Add more cheese, if needed.

  4. Bake for 15-18 minutes until you can put a toothpick in and it comes out with no liquid.

  5. Once the egg bites have cooled for a few minutes, remove them from the muffin pan and place them on a cooling rack. Rinse the muffin tin, and repeat this process until you run out of egg mixture! (Or, you can save the mixture for later in the week and do it again.)

  6. Enjoy plain or topped with your favorite condiment! (I love personally love adding avocado.)
