Protein Egg Bites
I find it hard to get enough protein in me! Especially in the mornings. However, I discovered something that was super helpful and yummy and that I can get 7-10 grams of protein per egg bite! It’s so easy to grab them and warm them up for 30 seconds and eat! I can’t wait to share this recipe!
Ingredients:
-1 cup of cottage cheese
-16 eggs
-Shredded Swiss cheese
-Shredded Cheddar cheese
-5 small bell peppers chopped
-chopped spinach (you can sub with mushrooms if you like)
-diced ham (you can also use bacon or sausage)
-diced onion
-1 teaspoon of salt
-1/2 teaspoon of pepper
-1 teaspoon of red pepper flakes (leave out if you don’t like this taste or add more if you love it)
-One 12 piece muffin tin
Instructions:
*preheat the oven to 350 degrees
Mix eggs, cottage cheese, salt, pepper, and red pepper flakes in the blender. Blend until foamy.
Grease your muffin tins with butter and then add your spinach and bell pepper mixes to half of the muffin tins. Mix in the cheddar cheese. Then add the ham and onion mix to the other half of the tins. Mix in Swiss cheese.
Add the egg mixture to each tin filling almost to the top. Take a spoon and mix each tin. Add more cheese if needed.
Bake for 15-18 minutes until you can put a toothpick in and it comes out with no liquid. Place egg bites on a cooling rack, carefully rinse the muffin tin out and repeat! Or you can save the mixture for later in the week and do it again!
Enjoy with your favorite condiment or personally I love adding avocado!
